One of my favorite Mexican dishes is "Mole". It is rice and chicken. I am not sure how they make the sauce but i know it is very difficult to make. When i lived in North Carolina my mom had a friend who would make it all the time! It is a spicy dish but not everybody makes it spicy.
uuummm. Mole..it is fabulous! I tried to make Chili Mole before and I don't think it went over so well. This picture is amazing, making me hungry!! Next time I go out to each at my favorite Mexican place I will try a mole dish. I am still waiting for my pupusas....
